Ingredients:
1 pkg of spice cake mix
1/4 cup softened butter
1 large egg
2 tbsp of orange juice
1 tsp cinnamon
1 tsp vanilla extract
1/2 tsp ground ginger
Frosting:
4 &1/2 cup of powdered sugar
1/3 softened butter
2 tbsp orange juice
2-3 tbsp of milk
food colors
Directions
Beat all cookie ingredients except for cake mix with an electric mixer until mixed and then add 1/2 of cake mix and beat well (2-3 min). Beat in remaining cake mix and beat another 2 min. until well mixed.
Wrap in wax paper or plastic wrap and refigerate for 2 hr. or until firm.
Preheat oven to 375 deg.
Roll out half of the cookie dough on a lightly floured surface to about 1/8 in thickness. Cut out cookies with gingerbread man cookie cutter. Place on ungreased cookie sheet 2 in. apart and bake for 7-9 minutes or until set. Remove from oven and let cool for 1 minute and move to rack and cool completely.
Beat all the frosting ingredients with the exception of the milk and coloring. Add milk as you go until it is of spreading consistency. You can add color if you wish. Take small amounts of frosting and add the desired colors. Decorate as desired. The amount of cookies will vary based on the size of the cookie cutters.
