Red Pepper, Garlic and Pecorino Gougeres



MAKES ABOUT 5 DOZEN GOUGÈRES


INGREDIENTS

1 large red bell pepper--stemmed, seeded, deribbed and cut into 1-inch pieces
1/2 cup water
2 garlic cloves, very finely chopped
6 tablespoons unsalted butter, cut into pieces
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 cup all-purpose flour
4 large eggs
1/2 cup freshly grated Pecorino Romano cheese
Pinch of cayenne pepper
