Chili with Rice

Ingredients


1 lb lean ground beef
1 small green pepper, chopped
1 pkg chili seasoning mix
2 cups of water
1 can (15 oz) kidney beans, undrained
1 can (15 oz) of tomato sauce
1 can ( 7 oz) of whole kernel corn, drained
2 cups of minute rice, uncooked

Directions

In a large skillet on medium to high heat, cook the ground beef with the green pepper and chili seasoning mix. When meat is browned, add the water, beans and tomato sauce.
Bring to a boil. 
Reduce heat to low, and cover
Simmer for 10 minutes, stirring occasionally
Stir in the corn and return to a boil.
Stir in the rice and cover.
Remove from the heat and let stand for 5 minutes.
Serve with shredded cheese, chopped onions, sour cream and salsa.
Makes 6 servings.
