Venus De Milo Soup

Ingredients

1 lb. of Ground beef (93 % lean)
2 stalks of celery- diced
1 can of tomato soup
1 pkg onion soup mix
3 (14.5 oz.) cans low sodium chicken broth
1 &1/2 qts water
10 oz bag of mixed frozen vegetables
1 cup of elbow macaroni or other desired pasta.

Directions;

In 4-5 qt sauce pan or dutch oven, saute the ground beef and drain excess fat, if any
Add remaining ingredients except for pasta.
Simmer uncovered for 1 hr. Prior to serving, add pasta and cook for additional 10 minutes.
Serve with crusty bread and parmesan cheese for sprinkling over the soup.
You could substitute diced potatoes in place of pasta. If so, add potatoes with other ingredients before simmering.
TIP: pasta will absorb a lot of the liquid if there are leftovers. You can thin soup by adding more broth when reheating.
