My mom taught me to make these as a child and I loved to make them for my dad as they were his favorite. Do you suppose it was because of the bourbon? Another plus is they don't need to be baked!
Because you'll be shaping the dough with your hands for these cookies, the dough needs to be firmer. You may need to chill in the refrigerator for 1 or more hours if it is too soft to work with. Always take care to roll the balls to the same size so the cookies will be uniform in size.
Ingredients:
1 (12 oz.) package of vanilla wafers, finely crushed
1 cup of walnuts or any of your favorite nuts
3/4 cup of powdered sugar, sifted if possible
2 tbsp. of cocoa
2 & 1/2 tbsp light corn syrup
1/2 cup of bourbon
Directions:
Combine the first 4 ingredients in a large bowl and mix well.
Combine the corn syrup and bourban in a small bowl and mix well.
Pour the bourban mixture over the wafer mixture and stir until blended.
refrigerate if too saft to work with
Shape into 1 in balls, roll in additional powdered sugar.
Depending on the size, the yield should be about 4 dozen cookies.
Stir in an airtight container
