This is an old standby and not necessarily baked only at Xmas. Delicious anytime.
Ingredients:
1 cup of butter preferably unsalted or you can use margarine
2 cups of firmly packed brown sugar
2 large eggs
1 tsp of vanilla extract
3 & 1/2 cups of all purpose flour
1 tsp of baking soda
1/2 tsp of salt
1 cup of chopped pecans. You may substitute walnuts if you prefer but pecans are my favorite.
Beat the butter at medium speed with an electric mixer until creamy. Gradually add the sugar beating well after each addition then add the eggs and vanilla and mix well.
Combine the flour, baking soda and salt and gradually add to the eggs and sugar mixture. Mix well and then add the pecans.
Shape the dough into tow separate logs and wrap in wax paper and chill at least 3 hours or so. You can make these ahead of time and cut and bake when needed.
Unwrap the rolls and slice in to 1/3 in slices. Bake on increased cookie sheet at 375 Degrees for 6-8 minutes. Transfer to rack to cool completely. Yield around 8 dozen.
