These are so easy to make and are good for you to boot. Please feel free to use any flavor of jam or preserves that you like.
Ingredients
1/4 cup plus 3 tbsp of softened unsalted butter or margarine
1/2 brown sugar firmly packed
1 cup of all purpose four
1/4 tsp baking soda
1/4 tsp salt
1 cup of quick cooking oatmeal, uncooked ( you can use regular oats as well)
1 4 cup of jam of your choice.
Directions:
Pre-heat oven to 400 deg.
Cream the butter or margarine and gradually add the sugar, beating well with an electric mixer at medium speed.
Combine the flour, soda and salt and add to the creamed mixture, mixing until well blended.Stir in the oats.
Press half of the mixture into a lightly greased 8 in square pan. Top with jam and spread to within 1/4 in of edge of pan.
Press the remaining crumb mixture firmly on top.
Bake for 30 minutes or until lightly browned.
Cool completely before cutting into bars.
Yield: about 2 dozen.
