2 & 1/4 cups quick cooking oats, uncooked
1 cup of flaked coconut
1/4 wheat germ
1/4 cup plus 2 tbsp softened butter or margarine
1/4 cup brown sugar firmly packed
1/2 cup of honey
1/2 cup of peanut butter
1 & 1/2 tsp of vanilla extract
1/2 cup chopped unsalted peanuts
1/2 cup of raisins or dried cranberries, or any other dried fruit you may prefer
Directions:
Combine first 3 ingredients in a greased 9 in square pan
Bake at 325 deg for 25 minutes, stirring occasionally. Remove from oven and set aside.
Combine the softened butter, sugar and honey in a medium saucepan and cook over medium heat, stirring occasionally until the butter is melted and the sugar dissolves.
Remove from heat and add the peanut butter and vanilla.
Stir until the peanut butter is incorporated. Pour over the oat mixture.
Add the peanuts and dried fruit and stir until no longer dry and is well mixed and moist.
Using greased fingers, press this mixture into another greased pan and bake at 350 deg for 12 minutes or until lightly brown on top.
Completely cool on a wire rack before cutting into bars.
Will make about 2 dozen bars
