Pralines

This is a delicious candy with many variations. I've listed a few. THey're all delicious. and will be a favorite with your friends and families.

Ingredients

Cooking spray
1& 1/2 cups of sugar
3/4 cup of firmly packed brown sugar
1/4 cups plus 2 tbsp of butter
1/2 cup of milk
1&1/2 cups of chopped pralines

Lightly coat a few sheets of wax with cooking spray and set aside.

Combine the remaining ingredients in a heavy saucepan. Bring to a boil over medium heat, stirring constantly. Boil uncovered stirring all the while for 1-2 minutes or until a candy thermometer registers 220 degrees. ( if using a thinner sauce pan, you should lower the heat and use the candy thermometer instead of a timer).
Remove from heat and beat with a wooden spoon 4-6 minutes or just until mixture begins to thicken. Working quickly, drop by tablespoonfuls onto prepared wax paper: let stand until firm. Yields around 2 &1/2 dozen.

For other varieties:
Chocolate Pralines: add 2 one ounce squares unsweetened chocolate before cooking
Chocolate-Peanut Butter Pralines: Add 2 tablespoons of creamy peanut butter before cooking and stir in 1 tsp of vanilla into cooked mixture before beating.
