Wedding Cookies

1 cup plus 2 tbsp of all purpose flour
1/8 tsp of cinnamon
1/2 cup (1 stick) of butter or margarine,softened
1/2 cup of finely chopped pecans
1/4 sifted confectioner's sugar
1/2 tsp of vanilla extract

Directions:

Combine flour and cinnamon in a large bowl. Add the softened butter, pecans, 1/4 cup of the confectioner's sugar and vanilla.
Stir until well blended. The mixture will be very firm
Shape the dough into 1 inch balls and place on un-greased cookie sheets.
Bake at 400 deg. for 10-12 minutes.
Remove from oven and let cool for 2 minutes.
Roll in additional confectioner's sugar while still slightly warm and then cool completely before storing in an airtight container.
Yields around 2 dozen cookies
