You'll need a Pizzelle iron for making these wonderful cookies
Ingredients:
3 eggs
3/4 cups of sugar
3/4 cup of unsalted butter or margarine, softened
1 tsp of vanilla extract
1/4 tsp of anise oil (if unable to find the oil, you may substitute almond extract)
1 & 1/2 cups of all purpose flour
1 tsp. baking powder
Vegetable oil
Beat eggs at medium speed of an electric mixer until foamy: gradually add sugar until thick and lemon yellow in color.
Add butter, vanilla and anise oil and mix well.
Add flour and baking powder and beat until smooth
Brush pizzelle iron lightly with oil and preheat for 2 minutes
Place 1 tbsp of batter in the center of iron, close and cook for 30 seconds on each side or until lightly browned.
Repeat with remaining batter.
Cool on wire racks.
Yields: 2 1/2 dozen
