Sweet Potato Souffle

Today's recipe is going to be for a wonderful holiday meal addition. My family, especially my grandson Kyle, all feel that no holiday meal is complete without this wonderful souffle. It is so much better than the typical sweet potato or yam casserole. While it is sweet, it is not so "desserty".

Ingredients:

2 cups mashed sweet potatoes (Large can available in supermarkets)
1 1/4 cups of sugar
2 eggs beaten
3/4 stick of butter (Melt)
1 1/2 cup of milk
1/2 tsp nutmeg
1/2 tsp cinn
3/4 Cup crushed corn flake crumbs
1/2 Cup chopped pecans
1/2 Cup brown sugar
3/4 stick of butter, melted

Mix first 7 (through cinn) ingredients well with mixer. Pour into a greased casserole dish
If using shallow casserole dish the cook time will be 20 minutes in a 400 degree oven. If using a deep dish, then the cook time will be longer, more like 40 minutes. Cook until almost solid in the middle. There can be a slight wiggle in the center.

TOPPING:
Mix together remaining 4 ingredients (cornflakes through butter) and spread evenly over the cooked casserole and bake another 10 min in the 400 degree oven.

NOW FOR THE EXERCISE OF THE DAY: WE CAN'T LET UP DURING THE HOLIDAY SEASON.

This one is simple also. It is targeting the legs, your core (abs) and arms.

Hold your dumbbells in each hand with your arms extended straight up over your head. Stand on my foot with your other leg bent at the knee, foot pointing backward (90 degrees). engage your abs and hold your back straight. Raise and lower the weights 10 - 15 times. rest and repeat. Do 2-3 sets and increase reps as tolerance improves.
